Flight simulators easily appeal to people who feel an urge to be able to be in control of an air-craft, even if it means simply learning how to take off and land. Somehow it fires up the imagination, and success brings a real sense of achievement.

The less sophisticated games concentrate on the graphics, and the controls are not so realistic. They still appeal to a lot of players, and they are a lot of fun without too steep a learning curve.

But if you want to feel like a real pilot you need to go to the more advanced simulation games, where you learn quite realistically how to fly an air-craft.
